I tried 2 recipes last week (i'm trying to make a concerted effort to cook now that I have more time and energy) and they both turned out really good! I did alter both based on my preferences and I like that they are both super easy and flexible for customizations.
Emma, for one pan meals, one of my go-to recipes has been Sheet Pan Bibimbap: https://cooking.nytimes.com/recipes/1022131-sheet-pan-bibimbap. It's great as written and is also a good "fridge buster" if you have leftover veggies and want something to do with them. Thanks for the recommendation on the sheet pan chicken thighs!
Claire, that pumpkin muffin recipe is my go-to! Luckily my toddler is obsessed with them, so I double the recipe and freeze a bunch. And we make them year round!
